Volume 14 Chapter 16: Velveting
"I'll think about it another time." Keith was too focused on his skewers to care about the gaze he received. Julius's jaw was clenched, Finrandir's ears stood on all ends while Othniel's nose flared. The only one who understood was Virel, who had an apologetic smile about this situation.
"No, you won't! You'll just ignore it!"
"Yeah!" "Mmmhmm!"
"Why are you the one complaining! You have no say in this!" Julius should be the last person sulking and irritated about this! There was a bakery in the royal capital! He should be content with that! It was like a person who was full asking for more!
"Why are you guys still here? Didn't Aunty Thalia and Lindor deal with you guys?" Thalia and Lindor should have gutted you all like a fish! His aunt definitely knocked her husband ten ways to none.
"..." Julius and the others shivered. His words brought up some bad memories! While they were frazzled, Edmund whispered, "Keith, do you know when you will incorporate the fruit bread into the bakery?" There was a bakery in his dukedom. From how he talked, Keith had no plans to incorporate it anytime soon.
"I plan to incorporate them a few weeks later. The bakery recently opened in the dukedom. I want the workers to get used to the old items first before adding more." Adding more to the plate without allowing his workers to adjust was a horrible call. It would only cause more problems for the group.
"...I understand." Edmund nodded. That was the right call, and he could wait. On the other hand, the trio continued to hound him until Keith snapped his fingers.
"Old man," "Father," "Father." Herrick, Carolyn, and Alfia stepped up to the plate. That alone was enough to give him time to work on his skewers.
"Papa, hungry." Eri raised her plate, and a loaf of blueberry bread appeared.
"Yay." The fox girl split it with Lei and Mir, and they started to nibble. Even when it was split in three, it was still large as they nibbled down like chipmunks.
"..." The customers could only gulp. How delicious are you making it out to be? How she ate it made it seem like the most delicious food in the world!
"Aria, ahhh!" Eri raised the piece for the owl, and the beast ate it kindly. Julius muttered, "How is she so close to the owl?" The blizzard owl was not close to many people besides Keith.
"Well, she's normal." This is the first time this has happened. Usually, she would ignore Eri.
Either way, they continued to work.
“Child, I’m quite curious as to what you’ve used to make the bread so fluffy.” Baker tried the new bread.
Taste would always be the surprising factor when it came to the child's cooking. However, it wasn't the element that most astounded the veteran chef. Following the flavor, it was the texture. Airy yet dense at the same time, the perfect ratio. Every bread in his bakery had this consistency.
Keith smiled, “Ahh, that’s because I used a special ingredient; if you like, I can tell you what to do with it. But I’m still doing some tests myself.”
Using and making baking powder was still a 50-50 thing for him. Despite the orange being a good acid agent to pair up with the baking soda, there could be other things to help improve it.
"Hmm? Is it fine?"
"Of course!" Keith smiled as he explained how he obtained the baking soda from the stone.
"To use those stones in cooking?" Baker chuckled, "You always have some new ideas to incorporate in cooking."
Keith grinned, "Of course, we use salt for food. Why can't other rocks be the same?" To use new ingredients unconventionally and to the fullest.
“Indeed.” Baker laughed when he heard that. Cleaning up, the group headed home.
Keith headed for the kitchen. Let's use baking soda for that. Baking wasn't the only method baking soda was used for. Keith turned to Diana, “Diana, I’m going to teach you how to use baking soda with meats. We're going to velvet it."
“Understood.”
Baking soda and cornstarch. Those were the two ingredients for velvet meat, making tough and rigid meat into juicy and tender cuts.
The first step was to coat the meat with some baking soda. Afterward, the meat would be fed with a mixture of cornstarch and water. The baking soda made the meat softer, allowing it to absorb any liquids and juices faster.
Seasonings and other spices were incorporated at the end.
“Keith, here is the broccoli.” “Thank you.” While Keith worked with the meat, Diana blanched the broccoli. The dorm mother's eyes turned to the meat.
“This is at least twice the size of the usual one.” The beef absorbed the juices that he had there. Keith placed them into oil to let them fry for a bit. That was enough as a rich golden brown beef was here, “Try it out; it’s much tastier.” Diana nodded as he took a bite. But when she did so, that was when she savored the taste of it. It was quite soft, delicious, and incredible. Keith smiled, “Let’s keep going with the others!” It was time for them to do the same thing for the other meats!
What do you think?
